It really lets the fruit and characteristics gained during the aging of the wine shine through without being covered up by sugary sweetness.
In this case, the wine was aged a full 24 months after the secondary fermentation (also called en tirage or on the lees) and before disgorgement. Gruet ages their standard Blanc de Blancs (which is a Brut style wine with 6-12 g/L of residual sugar) 18 months. They also age their other zero dosage wine, Sauvage, 18 months, so this limited release is really a step up from both.
On top of that, the wine has also had several additional years of aging in the bottle after disgorgement, allowing it to develop wonderfully. It’s not often you get this at a price this low.
If all this sounds very Champagne-like, there’s a good reason for that. Gruet is an American off-shoot of a prestigious French Champagne house.
If you’re not familiar with the incredible story of Gruet Winery in New Mexico (yes – New Mexico!) here’s how it came to be 40 years ago:
Gilbert Gruet, founder of Gruet Winery, was born in Bethon, France in 1931. He grew up in a poor family, and began working at a young age. In 1952, Gilbert Gruet, along with his wife Danielle, dreamt of producing fine quality Champagne. Gilbert followed his heart and in 1967 created the U.V.C.B. (Union Vinicole des Coteaux de Bethon), a co-op in the village of Bethon.
In 1983, the Gruet Family was traveling through the southwestern part of the US, and while in New Mexico met a group of European winemakers who had successfully planted vineyards in Engle, near the town of Truth or Consequences, 170 miles south of the city of Albuquerque. After hearing of vineyards planted there as early as the 1600s, and learning about the specific climate and soil conditions of the region, the Gruet Family knew they had found what they were looking for. In 1984, Gilbert Gruet – whose Champagne house (Gruet et Fils) has produced fine Champagnes in Bethon, France since 1952 – made the decision to plant an experimental vineyard in Engle, NM. The plantings were exclusively Chardonnay and Pinot Noir grapes. Two of his four children, Laurent and Nathalie Gruet then relocated to New Mexico to begin their American winemaking adventure.

This 100% Chardonnay wine contains zero dosage (no sugar added) making this sparkler bone-dry and crisp. Pale straw in color with a delicate but persistent mousse, this Blanc de Blancs boasts a pleasant minerality on the nose and bright citrus on the palate.
Pair with oysters, sushi and cream sauce pasta dishes.

The Gruet Blanc de Blancs Brut Nature opens with an inviting aroma of citrus, fresh baked bread and nice touches of tropical fruit. There’s also pleasing bit of minerality. It’s a great start.
The wine tastes crisp with plenty of delicious fruit — and not full of sugar! I love it. It also features lots of fine bubbles and similar flavors to the nose with continuing notes of chalky minerality to go along with the citrus and tropical fruit.
It ends crisp, gloriously dry and very long! This is our kind of sparkling wine.

Gruet produces a solid sparkling product…time and time again
Love it! I buy a case every time it is offered. My go-to for Friday night French 75s or Sunday brunch OJ-less mimosas.
I’ve been drinking Gruet sparkling wine for years and have always been impressed. Since my preference is for extremely dry bubbly, I was looking forward to this and it didn’t disappoint.
Did not taste like champagne from New Mexico. We liked it a lot
