From the winery:

2019 was a wet spring followed by a mild summer. It was ideal for long hang time and getting phenolic ripeness. Early season frost singed low areas but cooled off all northern locations and allowed for extended hang time of our Cabernet and Petite Sirah.

Acids remained naturally higher this vintage and brix were slow to accumulate until they spiked at the end of the season. Power shutoffs made pressing and pumping grapes difficult. In the end we got all the fruit in and made some beautiful wines for the mild season.

After years of scouring our extensive Home Ranch property, we’ve identified the finest blocks. The 2019 OVIS Cabernet Sauvignon is the culmination of years of thoughtful work in both the vineyard, and the winery. This blend is a combination of our highest tiered vineyard parcels, farmed specifically for maximum concentration and flavor. The deep garnet color, wonderful aromatics, and matured tannins are a dead giveaway of it’s High Valley origin. Sweet aromas of cherries, plums, and cassis are balanced with savory notes of thyme, and anis. The powerful tannins have softened through extended aging in a mix of new and used French oak barrels. This wine is perfect for your next dinner party, but will also hold up for many years to come.

And now on to our review:

The 2019 Ovis Cabernet Sauvignon begins with a very attractive aroma full of ripe, dark fruit plus leather, licorice, well integrated spice and touches of vanilla, mint and cigar box. It’s a fabulous start.

Taking a sip reveals a smooth, bold, chewy and dense wine that is loaded with deep flavors similar to the nose. Juicy and full-bodied it features great complexity, structure and acidity and it gets even better with air.

It ends dry, very long and grippy on the dynamic finish and it was just as good on day 2. This is a fantastic Cab with tons of aging potential.

High Valley provides an ideal terroir for Petit Verdot. The unique combination of high elevation, volcanic soils, and proximity to clear lake creates a microclimate conducive to the slow and uniform ripening of Petit Verdot grapes. The cool breezes from the lake help to temper the warm daytime temperatures, preserving acidity and flavor development in the grapes while protecting against excessive heat stress. This results in our ovis Petit Verdot that is rich, expressive and full of character, reflecting both the unique attributes of the grape and the place where it is grown.

Amazing wine takes time. From the Red Hills Vineyard we have produced this aromatic, rich, mouth filling wine. It took three years to find the best block of Petit Verdot in the Red Hills and two years aging in barrel to let the fruit components and tannin meld naturally.

Aromas of dried plum, juicy cherry, and white pepper, balanced with flavors of marionberry, sultanas, herbs de Provence and clove that lingers for ages. This very dark garnet wine will leave your glass stained and age in your cellar for years to come.

And now on to our review:

The 2021 Ovis Petit Verdot is still quite young, so it needs a good amount of time to open up. Once it does you’ll find a lovely, deep, rich and almost mesmerizing aroma of plums, blackberries, licorice, spice and lots of well integrated dried herbal notes, like bay leaf and thyme.

This one tastes just like it smells, which is a very good thing. It does need some time in the glass to fully open up but once it does it is wonderful. Big and rich with incredible depth, it has tons of structure. Quite chewy in its youth, it also has great aging potential.

It ends dry, very long, very grippy, chewy and quite satisfying. It just keeps getting better the longer it is open, and at this young age it was at its best on day 2.
