Cocktails are hot and sparkling wine is the perfect base to make all sorts of delicious drinks. Today we have four of our favorites using just a few common ingredients.

The Mixers

Here’s what you’ll need to make all four of these cocktails — in addition to the sparkling wine of course!

  • Gin
  • Aperol
  • Club soda or tonic water
  • St-Germain or other elderflower liqueur
  • Lemon juice

As for sparkling wine, while some recipes call specifically for Prosecco or Champagne, it really doesn’t matter what type of sparkling wine you use so don’t get caught up on that.

Prosecco, Cava, Cremant, Franciacorta, Champagne and even rosé – any and all of these can work so feel free to pick your favorite or just whatever you have on hand.

And now on to the recipes! All of these are super simple, just combine the ingredients and pour over ice. No shaking or fancy equipment required.

Aperol Spritz

Up first in our sparkling wine cocktails, we have a classic Italian aperitivo, the Aperol Spritz.

Refreshingly bittersweet, here are the ingredients and how to make it:

  • 3 ounces Prosecco or other sparkling wine
  • 2 ounces Aperol
  • 1 ounce club soda or tonic water
  • Combine ingredients and pour over ice

Aperol clocks in at only 11% alcohol, which is similar to sparkling wine, so this cocktail is refreshingly light and easy.

Note that unlike hard alcohol, Aperol will slowly degrade once it is opened. It should last anywhere from 3-6 months if stored in the refrigerator.

Hugo Spritz

We’ll stay with the spritz theme for our next sparkling wine cocktail as well, the Hugo Spritz.

Hugo Spritz Sparkling Wine Cocktail

This popular and trendy drink uses deliciously sweet Elderflower liqueur. Here are the ingredients and how to make it:

  • 4 ounces Prosecco or other sparkling wine
  • 1/2 ounce St-Germain or elderflower liqueur of your choice
  • 1 ounce club soda or tonic water
  • Combine ingredients and pour over ice
  • Optional: Garnish with fresh mint

St-Germain has 20% alcohol, so this one is a little higher proof although still relatively low overall given the sparkling wine and soda water.

Deliciously sweet and satisfying, you could also easily make this alcohol free by using alcohol removed sparkling wine and elderflower syrup. The Giffard brand also makes an alcohol free elderflower liqueur.

French 75

The next drink on our sparkling wine cocktails list is one of our favorites, a twist on the French 75.

French 75 sparkling wine cocktail

We replace the simple syrup typically used in this recipe with more of that delicious St-Germain. Here are the ingredients and how to make it:

  • 3 ounces Champagne or other sparkling wine
  • 1 ounce St-Germain or elderflower liqueur of your choice
  • 1/2 ounce gin
  • 1/2 ounce lemon juice
  • Combine ingredients and pour over ice

The alcohol is a little bit higher but so is the appeal. This is always a very popular drink.

The Favorite

And finally, the masterpiece of the group that combines almost all these mixers together – a sparkling wine cocktail we call “The Favorite”.

(We couldn’t find a recognized name for this one. While it similar to The Shaddock, The Bois de Rose, and an Aperol Elderflower Spritz none of those use quite the same ingredients with this ratio of sparkling wine.)

The Favorite Sparkling Wine Cocktail

Here are the ingredients and how to make it this fantastic cocktail:

  • 1 ounce gin
  • 1/2 ounce St-Germain or elderflower liqueur of your choice
  • 1/2 ounce Aperol
  • 1/2 ounce lemon juice
  • Combine ingredients and pour over ice into a cocktail glass.
  • Add sparkling wine to taste – we aim for a ratio of about 1/2 sparkling wine, so 2.5 ounces.

This one can have the highest alcohol percentage of the group, especially if you go light on the sparkling wine, so watch out!
