From the bottle:
GAIA, the Greek goddess of the earth, has been the Bousquet family’s inspiration since founding our winery 1997 when we pioneered and cleared virgin land in the high reaches of Tupungato’s Gualtallary district. From the start, our Gaia wines have been crafted with a French winemaking sensibility and made from organic fruit grown at a cool 1,200-m/4,000-ft altitude.
Brilliant sunshine and huge shifts in day-to-night temperatures combine to create a perfect marriage of Old and New World characteristics. GAIA Cabernet Sauvignon is made from our best, hand-harvested fruit. Superb structure, length, and mouth-filling black and red fruit make this wine a Cabernet stand-out.

The 2019 Domaine Bousquet Gaia Cabernet Sauvignon opens with nicely integrated aromas of black cherry, graphite, cola, spice, a little vanilla and a touch of a green note.
The medium-bodied wine needs a couple hours of air but then it’s really quite harmonious when tasting with dark fruit (black cherry, black cherry, plum) plus nice touches of spice, black pepper, cola and more.
A smooth mouthfeel with some chewy tannins lead into the dry, grippy, quite long and satisfying finish. It was just as good on day 2.

And here’s our previous review of the 2018 vintage:
The 2018 Gaia Cabernet Sauvignon opens with a pleasing aroma of black cherry, graphite, cola, spice and a little vanilla.
This fruit forward Cab tastes of blackberry, black cherry and other red berry fruit that is rich and even a bit sweet tasting in this quite dry wine.
It ends dry and long and was even a bit better on day 2. You might also want to check out our reviews of the Gaia Cabernet Franc and Gaia Red Blend.
