Here’s how we used these delicious salami to make our own scrumptious board:

Coro Salami board

Your pairing options are pretty much endless. We used what we had on hand at the time which meant each of the Coro Salami above were combined with roasted cabbage and eggplant from our CSA pickup that week plus pistachios (but Marcona almonds would have also made a strong choice), several different cheeses including our favorite Manchego, Medjool dates and our favorite crackers from Simply Mills, both the almond flour and seed flour crackers, which as an added bonus just so happen to be gluten free.

(My talented wife fancied it up by turning the salami into “flowers” – there are a ton of easy tutorials on Youtube if you’re interested.)

Pairing these delicious cuts of meat with wine is also a fun and easy task. Depending on what else you’re having on your board there are a ton of wines that will work well.

Some of our favorite classic pairings to go with any of these salami, but especially the Classic Salami, include: Zinfandel, Cabernet Sauvignon, Petite Sirah, Chianti, a Super Tuscan and if you’re having a lot of other high fat snacks like cheeses and nuts, Prosecco Rosé (or any sparkling rosé) is a great match and a fabulous palate cleanser.

As far as pairing to each specific flavor, there are a couple routes to go. You can accentuate one of the existing flavors – for example, pair the black pepper in the Finocchiona with a wine that has those same notes like a Shiraz. You can also go for contrast so something like a Pinot Grigio would work very well with this salami. Finally, you can just go with a tried and true option – in this case Carmenere pairs wonderfully with the curry notes in the Finocchiona.

Here are some favorites we found for the other Coro Salami in today’s deal:

  • I loved playing off the Lemongrass salami by pairing it with a grassy Sauvignon Blanc.
  • For the Hot Soppressata, Riesling or Gewurztraminer offer a great contrast while Syrah pairs great with the kick of spice.
  • For the Mole, a Cab would work fine but we especially liked it with a nice Tempranillo.
  • The Orange Cardamom salami actually has a lot of options with many white wines (Chenin Blanc, Viognier, Gruner and more) playing off the orange peel and cardamom flavors while a Syrah works nice with the red chili flakes.

How do I store my salami and specialty meats? Do I need to refrigerate my meat?
All our salami products are shelf stable, meaning they do not require refrigeration. We do recommend keeping our salami and aged specialty meats in a cool, dry place for best quality and are best refrigerated and kept loosely wrapped once open and sliced. The product will continue to dry over time but remains delicious to eat.

Do I need to peel my salami?
We believe in making life easy! Coro pre-peels the casing for our salami sticks so there is no need to peel the product.

How long will my cured meat last?
We guarantee 50 days on salami and aged specialty meats you order from our website. However, our salami and aged specialty meats last a long time. We add a best by date because we find the product retains its optimal moisture and flavor within this period of time. However cured meats are shelf-stable products. This means that, although the product continues to dry out the more it sits out (even when unwrapped), it will never go bad.

Do your products contain nitrites or nitrates?
Nitrates/Nitrites are salts traditionally used to cure meats and prevent harmful bacteria. There’s conflict among craft meat producers on which source of nitrates and nitrites results in the highest-quality, best tasting product. Our Uncured product line uses celery juice powder, a natural form of nitrate and nitrite found in celery and other leafy-green vegetables.

Is your meat Antibiotic-Free, Humanely Treated, Organic or Non-GMO?
Our products are made with pork that is never treated with antibiotics and certified humanely treated vegetarian-fed by American Humane Certified at humaneheartland.org. Unfortunately, there is a limited supply of organic and non-GMO pork in the US, although we hope to transition at least part of our product line to this at some point.

What are the allergens in your products?
All our products are gluten free, although a small number of our flavors have dairy. Please read the product description carefully if you need to avoid these ingredients. We always highlight any allergens in the product description.
