The 2017 Parker Station Paso Robles Cabernet Sauvignon begins with a very pleasing aroma of blackberry, plum and vanilla plus a little licorice and other spice. This smooth wine tastes just like it smells, which is a good thing. The fruit is juicy in the mouth and the oak is well-integrated. It gains additional complexity as it has more air. The finish, which is dry, surprisingly long and has lots of lingering dark fruit with touches of vanilla and chocolate, pulls it all together.
