The Ettore Pure Chardonnay comes from a organically grown grapes in the Sanel Valley Vineyard in southern Mendocino County. Just to north of Sonoma and to the west of Lake County, the vineyard features gravely and loamy bench land soils at 500-600 feet above sea level.
The wine does not see any oak (it was aged in stainless steel) in order to let the fruit shine, but it does undergo malolactic fermentation so you still get a bit of creaminess and a touch of butter, the best of both worlds in our opinion.
This wine also gains the nuance that comes with several years of aging in the bottle, while still tasting quite fresh. Perhaps even more incredibly for a wine made to age, no sulfites were added in its production.

Located in Hopland, California in Mendocino’s Sanel Valley, our winery is more than one hundred years old. Situated directly at the foot of the mighty Duncan Peak—whose refreshingly cool air assists the ripening of our organic grapes—our 64 acre estate is planted to 35 acres of vineyards which are interspersed with cover crops to promote and sustain ecological balance. Local workers spread compost and organic fertilizers, while also tending to the flora and fauna in the surrounding area. Our grapes are all hand-harvested at just the right moment, picked not just by our dedicated vineyard workers, but by all company employee including the owners.

A deep straw-yellow color with golden reflections. In the nose, it presents a fine but penetrating bouquet: notes of white flowers and exotic fruits, accompanied by buttery and vanilla nuances. In the mouth, it is elegant with a pleasant, lingering structure that accompanies it toward a soft, yet flavorsome finish.

The 2018 Ettore Pure Chardonnay opens with a fresh, inviting aroma of melon, a little butterscotch, a little bit of apple pie and a touch of vanilla. It's a great start.
It only takes one sip to realize that this is a really nice example of unoaked Chardonnay. Full-bodied with a very smooth and round mouthfeel, the fruit is similar to the nose but juicy in the mouth and has a bit more apple. Thanks to the malolactic fermentation you also get a touch of creaminess and perhaps just a hint of butter. It's a great combination and it gets even better as it warms up a bit so don't drink it too cold (i.e. right out of the fridge).
It ends dry, a bit tart, long and even a bit savory. There are absolutely no worries about it aging prematurely due to the lack of sulfites - it is still drinking very nicely right now. The winery puts the aging potential at 2025, which sounds about right to me.
