Interestingly today's wine didn't really start out at as a Malbec. Winemaker Steve Grimley explains:
"This wonderful Malbec started the first few years of its life as a Merlot. We'd been buying fruit on the assumption it was Merlot... I know, it doesn't take a rocket scientist! I spent that time indulging in the fact our fortune would be founded on Australia's darkest Merlot! After a couple of harvests I asked Jo (grower), 'you sure this is Merlot mate?' and after a few tests, sanity was restored and our big, dark Malbec was created. So much drinkability, it's scary."

I originally started making wine off this vineyard (Lopresti Vineyard) in 2001 when working down the South East of Australia, and by the time we moved up to McLaren Vale I had formed a pretty strong relationship with it and the family who owns it. It’s always nice to say you’ve made wine from every harvest of a particular site; you establish a special bond that only time can foster, a type of ethereal knowledge of the ebb and flow of each vine throughout the subtle and not so subtle variations of the season. About The 5OS Project
This is essentially our ‘Home Brand’. We make these wines ourselves and farm out others to mates, with the intention to create a range of wines that have heaps of drinkability but not at the expense of varietal, regional and vintage characteristics. They should also look the part, embracing the talent of the respective artists whilst encouraging them to find their own beat.Aromatics: Alluring dark fruits with a touch of development just starting to creep in.
Palate: Inky, nice oak providing texture and sweetness, mid weight and well integrated.
Finish: Plenty of sweet, raison like fruits bound with crisp lengthening tannins and noticeable acid.

The 2016 5OS Project McLaren Vale Malbec opens with a very enticing aroma of black cherry and blackberry. There also touches of spice, leather, earth and tobacco but the nose is mainly about the beautiful fruit.
It only took me one sip to know that I love this wine! Full of dark, juicy fruit plus plenty of spice and plenty of acidity this is wonderfully balanced and delicious. It's really just lovely and as the winemaker says, it is indeed highly, highly drinkable! Great on its own, it's also very food flexible and went wonderfully with our cauliflower crust and uncured pepperoni take and bake pizza from Aldi.
It ends dry and very long with lots of lingering dark fruit and spice. Aged to perfection, this is drinking beautifully right now and should continue to be at its prime for the next couple years. It was even slightly better on day two if you can somehow resist drinking the whole bottle the first day.
